Farm was born from passion, tradition and innovation, founded in 2014 with a clear vision: to take the tradition of Iberian pork into the future. Located in Campillo de Salvatierra, one kilometer from Guijuelo, we have not stopped innovating since our foundation. With advanced curing techniques and a focus on the genetic selection of pigs, we have managed to produce the best fresh and cured meat and top-quality sausages on a global level, providing value and quality to our national and international customers. 

Our commitment to quality is absolute. We have comprehensive product adaptation programs and an in-house quality department that oversees all our operations. We adhere to the highest international standards, such as SAE Level 3, and we implement a Product Fraud Mitigation Plan to ensure the authenticity of our products. Guaranteed quality: with our own in-house quality department, compliance with current legislation (Spanish law RD 4/2014 of 10 January and all other regional regulations)and with core quality certifications (IFS, SAE 3, Tierra de Sabor, Salamanca en Bandeja).

Highest quality iberian pork meat

Iberian pigs are found only in the Iberian Peninsula in both Spain and Portugal. This breed is really old, tracing back to over 12,000 years ago. Unique genetic, sustainable farming model, natural feeding and the habitat “Dehesa” result in the jewel of the Spanish gastronomy: Ibérico pork, the highest quality pork meat in the world. Iberian breeds give meat a greater infiltration of fat. This fat appears in the form of white or pinkish streaks that cut trough the meat. This results in a more intense and characteristic flavour. Iberian pork has just 9% fat like chicken breast, with the one difference being that this particular fat is oleic acid, which helps reduce cholesterol. The caloric content of pork is around just 250 calories per 100g.

Numerous studies support the regular consumption of meat due to the numerous benefits of Iberian meat for the body. One of the main benefits of Guijuelo Gourmet Iberian meat is that it stands out for its high content of high-quality proteins. High-quality protein, also called high biological value proteins, contains essential amino acids that our body cannot produce on its own. 

These amino acids are very important for the functioning of our body such as the growth, repair and maintenance of our tissues, including bones, muscles and organs. The amino acids present in Guijuelo Gourmet meat include histidine, isoleucine, leucine, lysine, methionine, phenylalanine, threonine, tryptophan and valine. You should know that consuming these proteins is essential to maintain a balanced diet and ensure the proper functioning of our body, including the formation of enzymes and hormones.

Benefits of unsaturated marble fats

The unsaturated fat content of Guijuelo Gourmet fresh Iberian meat has a very positive impact on blood cholesterol levels. These fats increase “good” HDL cholesterol and reduce “bad” LDL cholesterol, which contributes to reducing the risk of cardiovascular disease. Unsaturated fats, such as omega-3, also have anti-inflammatory properties that benefit our body. Role of fats in the diet – Despite their bad reputation, fats are indispensable in our diet. It is important to know that about 30% of daily calories come from healthy fats.

 These healthy fats have a number of important functions such as preventing cardiovascular diseases, improving the absorption of fat-soluble vitamins (A, E, D, K), reducing body fat and contributing to brain and hormonal function. Minerals and vitamins – Minerals such as calcium, iron, zinc, magnesium, phosphorus and selenium are present in fresh Iberian meat and this makes some of the body’s functions perform in the best possible way. In addition, it provides vitamins such as B1, B6 and B12 and vitamin E, which are essential for metabolism and oxidative and reduction balance.

Our new factory, located in Campillo de Salvatierra and opened in 2023, is one of the most modern factories in the sector. With 3,000 m2, we have 10 production lines and a storage capacity of 300 pallets.Besides we have 3 farms with an annual production of 10,000 pigs. Our farms are proudly Animal Welfare certified.We have our very own quality department, responsible for supervising all operations and establishing policies and procedures to be followed throughout the company.

In order to guarantee the control and traceability of our products, we specialize exclusively in Iberian pork.

Our greatest efforts go into exporting our products, only selling in countries with level two and three SAE (specific self-monitoring systems). This means we can achieve the highest international quality standards and export to even the strictest countries.

Furthermore, in line with our continuous improvement ethos, we’re constantly working to obtain new quality marks and guarantee maximum transparency by working with the sector’s best laboratories. Our factory recently got the IFS Food certification.
